Asian Chicken Salad

TIPS: Great dish to make up a lot of and eat throughout the week.
¼ cup lime juice
4 tsp sesame oil
2 tsp rice vinegar
2 tsp soy sauce
1 ½ tsp fish sauce
1 roasted chicken (or cooked chicken breasts)
2 medium carrots
1 ¼ cup red cabbage thinly sliced
1 ¼ cup green cabbage, thinly sliced
2 tbsp. peanuts coarsely chopped
2 tbsp. fresh cilantro leaves
1. In a large bowl, mix lime juice, oil, vinegar, soy sauce, and fish sauce.
2. Remove meat from the rotisserie chicken and toss in the sauce mixture.
3. Divide cabbage and carrots between bowls and top with chicken.
4. Top each with peanuts and cilantro.
